Creamy Coconut Jackfruit Noodles
Ingredients:
* 1 can of young green jackfruit, drained and shredded
* 200g rice noodles
* 1 tablespoon of coconut oil
* 1 small onion, finely chopped
* 3 cloves garlic, minced
* 1 red chilli, thinly sliced (optional for heat)
* 1 can (400 ml) coconut milk
* 2 tablespoons of soy sauce
* 1 tablespoon of lime juice
* 1 tablespoon brown sugar
* Salt and pepper to taste
* Fresh cilantro leaves for garnish
Instructions:
2. In a large skillet or wok, heat coconut oil over medium heat. Add chopped onion, minced garlic, and sliced chilli (if using). Sauté until the onion is translucent.
3. Add the shredded jackfruit to the skillet and cook for 5-7 minutes, or until it starts to brown slightly.
4. Pour in the coconut milk, soy sauce, lime juice, and brown sugar. Stir well to combine, and let it simmer for a few minutes until the sauce thickens slightly.
5. Add the cooked rice noodles to the skillet and toss everything together until the noodles are well coated with the creamy sauce.
6. Season with salt and pepper to taste. Garnish with fresh cilantro leaves before serving. Enjoy your creamy coconut jackfruit noodles!
