Spicy Jackfruit Noodle Stir-Fry
Ingredients:
* 1 can of young green jackfruit, drained and shredded
* 200g rice noodles
* 2 tablespoons of sesame oil
* 3 cloves garlic, minced
* 1 small onion, thinly sliced
* 1 bell pepper, thinly sliced
* 2 tablespoons of soy sauce
* 1 tablespoon sriracha sauce (adjust to taste)
* 1 tablespoon of rice vinegar
* 1 teaspoon brown sugar
* Salt and pepper to taste
* chopped green onions and sesame seeds for garnish
Instructions:
1. Cook rice noodles according to package instructions. Drain and set aside.
2. In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and sliced onion and sauté until fragrant.
3. Add shredded jackfruit and bell pepper to the skillet. Cook for 5-7 minutes until the jackfruit is tender.
4. In a small bowl, mix soy sauce, Sriracha sauce, rice vinegar, and brown sugar. Pour the sauce over the jackfruit mixture.
5. Add cooked rice noodles to the skillet and toss everything together until well combined and heated through.
6. Season with salt and pepper to taste. Garnish with chopped green onions and sesame seeds before serving.
