Cookies and Cream Ice Cream Cake
Ingredients:
For the Cookie Layer:
24 Oreo cookies, crushed
5 tablespoons unsalted butter, melted
For the Ice Cream Layer:
2 pints vanilla ice cream, softened
1 cup crushed Oreo cookies
For Topping:
Whipped cream
Whole and crushed Oreo cookies for garnish
Directions:
Prepare Cookie Base: In a medium bowl, mix the crushed Oreo cookies with melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan to form a firm, even layer. Freeze for about 30 minutes to set.
Assemble Ice Cream Layer: In a large bowl, stir together softened vanilla ice cream and 1 cup of crushed Oreo cookies. Spread this ice cream mixture evenly over the frozen cookie base. Freeze for about 4 hours, or until firm.
Add Toppings and Serve: Before serving, top the cake with whipped cream and garnish with whole and additional crushed Oreo cookies.
Final Touches: Allow the cake to sit at room temperature for about 10 minutes for easier slicing.
