Lemon Garlic Butter Chicken


Ingredients:

💢 4 boneless, skinless chicken breasts

💢 Salt and pepper to taste

💢 2 tablespoons of olive oil

💢 1/4 cup chicken broth

💢 1/4 cup fresh lemon juice (about 2 lemons)

💢 1/4 cup unsalted butter, melted

💢 4 cloves garlic, minced

💢 1 teaspoon dried thyme

💢 1 teaspoon dried rosemary

💢 1 lemon, thinly sliced

💢 Fresh parsley, chopped (for garnish)

 

Instructions:



1. Preheat the oven to 400°F (200°C).

2. Season the chicken breasts with salt and pepper on both sides.

3. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook until golden brown, about 4-5 minutes per side. Remove the chicken from the skillet and set it aside.

4. In the same skillet, add the chicken broth, lemon juice, melted butter, garlic, thyme, and rosemary. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.

5. Return the chicken to the skillet, and top each piece with a lemon slice.

6. Transfer the skillet to the oven and bake for about 20–25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

7. Garnish with chopped parsley before serving. Enjoy it with rice, pasta, or a fresh salad.
